Salad

INGREDIENTS
(4 servings)
1 lettuce
2 medium potatoes
2 hard boiled eggs
2 tomatoes
Anchovies
Grilled pepper
Green pepper
Olives (any kind)

For the vinaigrette
1 egg yolk
3 tbsp. of vinegar
12 tbsp. of olive oil
Salt
Pepper

PREPARATION
Place the potatoes with skin for 20 to 30 minutes, according on how large they are. Once cold, peel and slice them.

Place a bed of lettuce in a plate, the sliced potatoes at the center and the also sliced hardboiled eggs around the potatoes.

Cut the tomatoes in eighths and place them on top of the lettuce. Then add olives, strips of roasted pepper, and strips of anchovies and slices of green pepper.

As you assemble the plate, also pour vinaigrette with egg prepared as following:

Place the egg yolk in a plate with a pinch of salt and pepper and bowl with a mixer. Add a tbsp of vinegar - whisk - a fourth of oil - whisk - one of vinegar

And so forth until completing everything stated in the recipe. You will notice how you'll get a bound but light sauce.
